Yeah Jedi survivors who refused the call or even abandoned the Jedi order make sense but having people like Ezra, Kanan, and Asoka be predominant members of the rebellion and never even be brought up to Luke would raise questions. Even if the worst Jedi can’t take on Vader, they are still a huge addition to the rebel forces.
in regards to tv shows, I find that Japan takes the complete opposite approach for some reason. Apart from historical dramas which are the CSI/Law & Order equivalent, most dramas only last 1 season with the really popular ones having 2 or 3 max. After a successful 2nd or 3rd season, the show will often have a movie to end the series with a big conclusion (the movie being a separate story so new comers can enjoy while fans get the references). I don’t know the economics about why this occurs (I think it has to do with contracts).
From my understanding, US tv show runners are also willing to “run their shows into the ground” so to speak because of their relationships with the cast and crew. A long running show results in a consistent and growing paycheck which is something anyone can appreciate. It’s kind of hard to end a super popular show for “artistic integrity” when a network is offering a ton of money that would guarantee you and the people you work with a consistent paycheck for at least another year.
