Hate to break it to you, but Luke hasn't even started training anyone. He won't for another 14 years.
And then what's the point? We know he screws the pooch in Disney SW so why bother? They've done enough damage to Luke with the Sequels, just leave him alone. My head canon is better.
As for why Ashley Eckstein didn't play Ahsoka, I'm guessing she either doesn't have any live acting experience or maybe she's too short? Rosario Dawson is 5" taller, so IDK.
Even if they did use Luke, how could they save him? Mando is 30 years before the ST. Anything they could do with him would still be ruined by the time the ST comes around.
You might say those don't count, but the people that own it aren't going to say that.
Until one of the show runners acknowledges those are proto-Snokes, I don't think it's appropriate to assume that's what they are unequivocally.I didn't like how they did Luke dirty myself, but I've resigned myself to the fact that those sequels aren't going to be retconned.
What the Mandalorian can do, is shift the focus from them to back ground stories like they did in CW, Rebels and Rogue One.
Obviously they've acknowledged their existence with the bottled Snoke in Ep. 4, but that doesn't mean they will heavily focus on anything to do with Rey or even Palpatine fully, yet.
There's still a chance that Moff want's to be force sensitive, or even Thrawn. And even if it isn't either of them, I still don't think this will have anything to do with the future stories in the long run, other than a few lose ends. This is about Mando and Grogu. They are two foundlings in desperate need of a family, in which they've found in one another.
I think bringing in any bigger character other than Ahsoka, would really over shadow that.
