Not really a knife person but one knife I really, really like is the Bowie knife from The Alamo.

The knife from the Alamo is based on a knife in the collection of Joe Musso. He think it might be the real Bowie knife that Jim Bowie carried to his death at the Alamo. I talked to him a few time and he even went so far as to have the knife tested. The results were the the knife was hand forged in a coal forge around the time that Jim Bowie was said to have the original made.There is also images of the knife that appear in several book about Bowie and the war for Texas the shows who I believe is Gen Sam Houston use the knife to wittle on a piece of wood.Say what you will there is just too much evedence out there to to say no to Oh and please forgive me on my spelling:unsure
 
I know the Gil Hibben Double Shadow was used in Timecop, along with supposedly a few other films.

Timecop just sticks out in my head, because I had just bought the knife right before I saw the movie, and I had also just started getting into movie props.

Terminator: The Sarah Connor Chronicles. Last weapon used by Cameron. Screen caps and the one I bought that I'm sure is a good match for it.
 
My first love are the first three Rambo movie knives, then the Jack Crain Predator and Commando knives.

I've never seen anything on that knife, but would love to have one!

I've always been partial to the bone knife used by Tristan (Brad Pitt) uses in Legends of the Fall.

A few years ago I researched it a bit, but sadly do not know where the materials I was reading ended up. I do believe though that the director (Swick) may have kept the hero knife.
 
I was going to add the knife from The Hunted but jumpin jax beat me to it, just watched the movie again, and saw some paper prop items too.

Here are just a few of the favorites in my collection.

From left to right:
Throughing knife seen in countless movies and shows.
Jackal seen in Buffy and Star Trek Nemeses.
Spiderman two knife.
Klingon knife from Generations.
Pocket knife from new Battlestar Galactica,
Knife from the 90's Dracula movie.
Jayne's knife from firefly, and serenity.
Dargo's knife from Farscape. (it was also in an episode of Angel.)
(all the ones in the pic are all "off the shelf", or replica knifes, non are screen used pieces.)

I have a hand full of other prop "replica" knives, but I don't have pics handy of them.

Oh, and I love Jayne's "Jayne's town" knife. I would give my left arm for a replica of that knife.
