When it grew back, the various radiations he was exposed to (from the RTG, various cosmic radiations that could have begun seeping through the materials of an environmental suit not intended to be used as often or as long as Watney did his) caused mutation that made it go grey.

I suspect Watney was also dealing with malnutrition, which could lead to his hair turning gray. (I don't know if the vitamins he had would have covered everything he needed.)

Don't forget also the stress of trying to survive while stranded and all alone on Mars. That alone would probably turn just about anybody's hair grey.

That was what I thought too. It never entered my mind about the radiation. I'm guessing it was a combination of everything he went through and thought it was a nice touch.

Taken out of context, this is the funniest thing that I’ll see today…
I took it that it wasn’t just losing the crop. You have to remember, he wasn’t eating just potatoes. He was using them to expand his already existing rations so that they can last longer until he could get in contact with NASA and have them send more supplies. Even if he were to replant a new crop, the gap of time between the loss of the existing crop and new crop wouldn’t be enough time for them to build, resupply a new rocket, wait for a close enough window to send it and the travel time for it to reach Mars (keep in mind, this was before China stepped in and offered theirs). Also, at a certain point, he will run out of the regular rations and have just potatoes, and a person cannot live on potatoes alone. After a certain point, he would have had just potatoes, and then suffer from a deficiency in vitamins A, E and K, the minerals calcium and selenium, essential fatty acids, protein and dietary fiber. After running out of his rations, he’d only be able to live for a few months more before dying. In addition to that, since he lost his crop, even if he were to replant, he’d end up using more of his rations until the crop is ready again, and hasting up the just potatoes sooner than later. But that’s just how I took it. I’m sure the novel has a better explanation that the film lacked.
