So, as long as the Stormtroopers don't remove their helmets, they're aim is terrible? Good to know fact.

No, just the opposite: HAn and Luke had left their helmets on, and Leia was also wearing identity-concealing armor, they would have been toast.

As far as the Imperial Stormtroopers were concerned, the last order they received was 'let them escape but don't make it obvious.'

Tarkin gave the order soon after the Falcon landed in the Death Star. The Rebels escaped and blew him up. Nobody except Vader knew about it, since only he escaped when the Death Star went up.

Vader didn't tell anyone or rescind it because he wanted to capture Luke.

That was still the Stormtrooper's mission the whole way through ESB & ROTJ because nobody said to kill the rebels.

Sorry, one argument blows this attempt to rationalize why these highly skilled riflemen couldn't hit the broad side of a Super Star Destroyer.

If they were trying to capture these people, why were they always firing lethal shots instead of the blue circular stun option?

They weren't trying to capture them, but let them escape as per orders.
