I would be cautious about third party power supplies because they usually give higher voltage than stated to compensate for less current.

I agree. And also, lots of 3rd party adapters are unregulated meaning the output can change significantly when the input voltage or load current changes. If you don't know if your adapter is regulated then assume it's not.

Thanks that's good to know. If and when they do burn out, can one simply solder in a replacement strip without needing to mess with the Arduino chip ?

Yes, of course. Nothing needs to be reprogrammed, as long as it is the same model of LEDs.
