In the Celebration III pictures it looks like the belt may have beveled edges, but in the pictures from the COSI exhibit I took (see below) it doesn't look beveled. Strange.

Not so weird. I saw two different Anakin belts in exhibits. One made with the crinkled leather and another one made using plain leather. This is probably cause they built some many costumes. I think that they had a quality test failure

Hey Kyle,
I've made a number of replica Jedi Belts and here's a few things I've learned in my research:
> Leather is hand-dyed from natural color 5-6/6-7 oz leather (depending on scene). The visual dictionary belt is close to screen accurate but not exact as it is thicker than what was used in most scenes.
> Anakin's belt color is around a Medium Brown. Obi-Wan's color is around a British Tan.
> The belt is only dyed on the smooth top of the leather.
> The crinkle look is actually achieved from taking the flat hand-dyed leather and weathering the belt by folding it over itself length-wise repeatedly.
> The edges of the belt are beveled and not rounded.
> To prevent the leather from cracking, treat it with a coat of neatsfoot oil (front and back), let it soak in before adding any acrylic resoline to finish it, then roll the leather to achieve the weathered look.
Hope that helps.
