Hardcover and softcover are the only differences as far as I know.

Hardcover has more:

"And the deluxe hard cover has 372 pages, featuring all the early storyboards -- and George Lucas's first recorded thoughts on the Expanded Universe. I didn't know if he'd want us to print those, as they differ from what came after, but he said it was okay."

I was just waiting to get it as soon as it came out but I don't want it to be unavailable when I go to my local shops come to think of it.
