Best All-Time Making Of & Behind the Scenes?

The only one I've care to see is the Star Wars OT stuff. (Wish they would get more into the props. lol.)
 
The Making of Tron is really insightful and enjoyable to watch. Definitely my favorite "making of" documentary. When I first watched the Blade Runner documentary, I had no idea it was going to be 3-hours long. XD That's a really great documentary too.
 
The making of King Kong (original 1933 film) on the Special Edition DVD release. Really fun stuff where they try to recreate the lost spider pit scene and Weta workshop constructs period accurite stop motion puppets.

I agree with Tron. It's really that good... The extra DVD features and behind the scenes footage and interviews on DVD 2 are amazing. (y)thumbsup
 
For "making of" type documentaries, I'd say Dangerous Days (for Blade Runner) was one of my favorites. I'd also say that despite the fact I don't love the Star Wars prequel trilogy, they arguably had some of the best made "making of" documentaries I've seen. Heck, I'd argue that the "making of" documentaries on the prequels are better than the movies for that matter...

As far as commentaries go, I enjoyed Roger Ebert's commentary on Dark City the most out of all the ones I've listened to.
 
One of my favorites, is a bootleg! It is the making of Alien, but it was filmed by H.R.Giger, and his girlfriend (at the time ) Mia. From time to time it will pop up on Evilbay, which I got on VHS, about five years ago. I just converted it to Dvd last year. It's not the greastest copy, and I have no idea how many copies it was copied from, but it is very insightful. I think they have a bootleg on Dvd now, but it's an awesome behind the scene's film, that shows things no one else tried to capture. I don't know why they never tried to release it better, unless it was for copyright issues.
