What you see in the movie is CG, but I'm pretty sure they built a study model. I seem to remember seeing it in Chronicles. Same story with a lot of the prequel ships and vehicles. Not all, but a lot of them.

I just took a quick flip through my Prequels Chronicles. The only thing I saw for the ARC-170 is page 242 which is entirely devoted to it. Don't get too excited, there aren't all that many pics. I didn't see anything there to indicate a studio model. It looks like all CG renders.
The only thing I saw that looked like might be a studio model (for a full ship, there were losts of sections for capital ships and environments) was Obi's blue Jedi Star Fighter for the Utapau landing platform page 260.
Of course there were the full scale mock ups of the Jedi Starfighters for Obi's and Ani's close up shots during the Battle of Coruscant.
Looks like it's all CG save for the one Jedi Fighter on the Utapau platform. Again, that was a pick flip through, so I could have missed something.
