ice cream maker guy haveing been forced away from cloud city eventually cornered the icecream market on tatooine...he wears his icecream maker as a mysterious helmet now and has his own rancor.
beginning episode 7, ice cream trade routes will be in dispute.
he's singlehandedly built his ice cream EMPIRE thanks to his special ice cream secret recipe flavor he labeled. "SPICE"

It would be a nice out of the way place for Luke to rebuild the order. No distractions out on the outer rim.

Really? It's out of the way? How do you figure? 'Cause from what I can tell, everything important that happens in the six films happens there or ties back to there.
You know what'd make it clear that Tatooine is out of the way? Showing other places that are not out of the way and establishing how important and central THEY are.

Well, Tatooine is familiarity for a star wars movie but it could be we only see Tatooine for ten minutes... having said that, being some filming is taking place there does not necessarily mean it will be Tatooine. Could be another planet with similar features... New Mexico has a lot of greenery too. Might be a different planet altogether... we don't know the intended use of that location.
