“It's almost like they're in uniform—a police mentality. Same for the lightsaber design, you don't get to choose a customized fancy one. There's 500 that are all the same, you just grab one, like the default Colt for a policeman.”
Doesn't that fly in the face of what has been shown so far? Like, Huyang's work on the Crucible, and all that stuff? Or is this where clan sabers originate?

I'd say the two obvious answers are either:

1) Huyang was indulging in hyperbole (Do we have anything other than Huyang's word for how long he's been active?), or

2) Huyang is evidence of functional elitism inside the Jedi Order during this point in history, where certain members got unique and customised equipment, but the bulk made do with essentially mass-produced items.

Remember that live-action barely bothers to keep consistent with the animation, and completely ignores the books/comics/games, so anything that's not in a show or movie can be overwritten at any time. The Doylist answer is almost certainly that the Acolyte production team didn't bother trying to make their design language stay consistent with a minor character from the animated shows, and (to my memory) there's nothing in Asokha that says he was involved with every youngling's lightsabre.

Things change over time. In a funny way something like the Graflex flash has gone through similar changes. It started as a mass produced item, but was still hand made, in different shops, with slightly different materials, thus giving us all the changes we find. As time went on, you get to the INC and it's pretty uniform compared to the Folmer. Then it's left behind for the Graflite, which is inferior in every way save for ease of use. Jump ahead a few decades, and flashes are mass-produced on assembly lines and are all the same within a given brand. Jump ahead another 30 years to now, and there's definitely hobbyist photographers interested in vintage gear that are crafting bespoke gear.

I don't think the history of the lightsaber has to be a straight shot, things evolve and change over time. You could have an era of hand-made lightsabers, then as the order grows they start fabricating them, then at some point toward the end of the High Republic some Jedi Master says "You know these Palawan's need? To build their own dang lightsabers. Let's bring that tradition back."

All that said, I still hate the seers on this show aesthetically lol

"I see you have constructed a new lightsaber. Your skills are complete. Indeed, you are powerful as the Emperor has forseen"
-Darth Vader
At some point we have to look at the origins of Star Wars and take "The Story" at face value and in context. The only context i can get out of this line of dialogue is that to construct a lightsaber was to complete the skills of a learner to become a Jedi Knight. There was some obvious importance for this as well as the training. Maybe i'm missing something but in the context of the story, i believe it to be more than some weak tradition that anyone can just pick up and do. That just renders what Luke did as some nonchalant thing and undercuts the quote from Vader himself as if he has no idea what he's talking about. So to me, that's yet one more way of saying there is no original story, we can just make it what we want it to be...but in doing that we are eliminating the foundation of it all...the lore, the mystique, the gravity of the story etc.

I'm hoping i'm not taking your point out of context.

In my opinion, their approach to lightsabers themselves is reflected in how they look...less than mediocre, and i'm being nice.lol

Kinda looks like someone didn’t crop or add the blade to the shoto saber correctly here…th blade should be right at the end near his hand, instead youre seeing the whole core the blade is attached to.

They way I kind of take it: after getting a crystal, they just put it into one of the generic hilts. You even see this essentially in that episode of Clone Wars: Huyang just had drawers with parts. I would imagine, with more Jedi, the variety suffered just for the sake of having *enough* on hand. You probably could request to specially make one out of parts you have found or parts you *made*, but most younglings never did that. And Jedi of that era don't seem to care too much. It might even be a sign of Jedi mastery: build your lightsaber in solitude, without the provided parts. I would even say that Obi-Wan, Anakin, Yoda, and Mace were probably considered weird for making more unique and weird lightsabers. And they were recognizing more ancient customs for lightsabers.

Like this is where the blade should start, i think the rest is just the practical blade holder, looks too smooth compared to the rest, clearly wasnt supposed to be visible, especially when the larger half is in his other hand.
