Looks like a regular Imperial officer type in a bit of armor rather than a Stormtrooper?

I think there's ample interest, but, at least from my personal experience, it's not worth the baggage that some members would bring up to devolve a great discussion.

If LFL took the time to build a TIE filming cockpit, I hope they built this full 1:1. It'd be great to see it at a Star Wars celebration akin to the Mandalorian Experience in SWC Anaheim.

I think that the issue with the costumes, so far, is that aside from the prisoner uniforms, local security forces and the ISB, none of the costumes are that distinctive/iconic. Because of that, I think that people are less interested in them, at least to a certain degree,
