I don't know. I think it should be possible though. The only concern about making an alteration to remove the flaps is whether doing so would leave behind holes in the fabric. That Woolrich is, in my opinion, the closest shirt that I've seen because it also has large chest pockets placed below the chest. I've not seen a good one without chest pocket flaps, let alone one with a rounded collar.

I don't see much of a concern if you use the proper tool to remove those flaps, you should have minimal holes in that type of fabric, especially if you wash the shirt afterwards. Respect the drying instructions on the shirt also is a big plus.
