We just pass the two loose ends through the center of the loop and then wrap it around itself to make a knot. I'm sure there are plenty of other ways to do it, we just keep it simple. If that's not clear, I could probably make a little info-graphic. Let me know...
OK, that's basically how I've got it tied now... It's just such a nice-looking piece, it felt like it warranted some kind of fancy "classical" knot that I'm sure I don't know how to tie.
