So now that Gandalf has found Sauron, I wonder how this will play in a re-watch of Fellowship of the Ring when he was unaware of his rise in Mordor.

He wasn't. The White Council knew damn well who and where Sauron was, ever since he left Dol Guldur. The timing was shifted in the film, but not by much. The only thing that Gandalf didn't know in FotR was the nature of Bilbo's ring. Just because he didn't share this with Bilbo or Frodo doesn't mean he didn't know.
