Definitely I think the reason they didn’t go that route was because there was too many innocent people in the streets

At least that’s the only thing I could think of
Fett rode a Rancor info battle in the streets because the people of Mos Espa needed to SEE Boba Fett protecting the city, not a ship blasting up in the sky that the people of Mos Espa may or may not have known was his. He has much more credibility going into battle himself to protect his people.

I was absolutely awful at predictions, but after Trejo said to the Rancor, “Don’t Worry. He’ll be back,” I thought this will be great. Trejo in all his menace, training the Rancor to kill Boba! But in the end, no more Trejo, all the training behind the scenes and we are supposed to believe the Hutts actually gave him the Rancor as a harmless gift?!

Yes, after the assassination attempt failed the Hutts needed to clear the books on Tatooine in favor of the Pikes (who made a deal with them?). And they can't do that is Boba has an outstanding vendetta against them. The last thing they want is to have to keep an eye out for Boba on another planet. It's in their best interest to keep the number of people who want to kill them, and have the skills to pull it off, small.

See! So I’m not crazy. I totally thought they were actually setting up future plot points to pay off later. But most of the show felt like that. It keeps you thinking that what you’re seeing is significant, but they never return. Leaves you with a bunch of loose ends.

Absolutely not crazy. So many plot lines in which I thought “It will be cool to see what they do with this!” Instead, we got fizzled out fireworks-fzzzt.
