All movie series have a theme. Fast (and or furious) cars, long walking journeys, cloaking devices, terrorists defeated by a man in a wife-beater, teen learning new and better karate skills. Star Wars has large weapons of destruction. But I won't hate the movie 2 months before it even comes out for having one.

The best of the series had no such weapon. The reason empire works so well is for it's incredibly natural structure. It's just about characters reacting to a situation. There aren't really any action movie cliches.

Our good guys are on the run and they get their asses handed to them.

That's the plot. They don't have to rob a casino or steal a magical ring or drive a truck of beer from Texas to Georgia.

I guess for me, "blowing up a superweapon" is pretty much the simplest action plot line ever.

There are a lot of other stories to tell? What about a good old revenge story?

Don't get me wrong. Blowing up the death star was the PERFECT plot for ANH. Because that is what started the war. But then it needs to continue on into different directions.
