Solo Mudtrooper

So I am thinking about putting together a solo swamp trooper costume and I am wanting to figure out what kind of pouches those are across his chest, I am figuring it's a type of mag pouch from world war 2 maybe a stick mag of some kind.

Yep.They are German Wehrmacht MP40 magazinepouches. Searching for "Magazintasche" and "Stangenmagazine" might help (the term for the long stick-like magazines). Also adding leather ("Leder") will ensure you don't get all the canvas versions as results.
You'll find them on eBay. There are also cheaper Yugoslavian ("Jugo") versions around that are similar.

I figured it was German, there are so many german things in the empire costumes. While I am at it the soft parts of the costumes look like a form of canvas but I cannot tell

It's a cool look. Really gives a WWI steampunk feel. Looks like this armour got used in the Mandalorian, the second season episode with Bill Burr

Oh yeah the transport trooper, I completely passed over that. You could make two cosplays from one, just change the helmet and drop the cape

It is actually not German it is a Yugoslavian/Serbian M56 magazine pouch. Same as the Shoretrooper in Rogue One.
