"For Star Wars: Skeleton Crew, ILM enlisted modelmakers John Goodson and Dan Patrascu to build a filming miniature of the Onyx Cinder, complete with dynamic lighting and motorized engines. Adam Savage visited the miniatures stage set up at Lucasfilm during the production to check out the model and chat with John and Dan about how they built the ship–a gorgeous model with no 3D-printed parts. Love these videos! It's interesting that they have to essentially disassemble the whole ship to change the mounting point. I know that this model is technically more sophisticated than the 5' Falcon, but weren't there just covers on the Falcon that they would pop off and then slide the mounting rod in?

Yes, I don't remember how many of those mounting rods were in the 5' MF, but I saw, not long ago, that some were in the escape pods parts of the model (on each side).
