I'm surprised you didn't fill in that big void with some cheaper material before laying on the expanding foam.

Quick foam question; when the foam expands does it force any containing perimeters apart or does it conform and stop expanding once there is no more room?
You can contain it and limit the size of expansion, but it will build up a tremendous amount of pressure along the way. You're better off pouring it into an open shape of some sort so it has a place to go if it expands too much. At the very least you want to put a series of relief holes to keep the foam from breaking things.
