Ah, right, I forgot. I have some pictures of the finished belt pouches:
When I had finished everything I rubbed them down with seal's fat:
(Also the table suffered an injury, in the form of a rather unsightly leather dye stain xD)

Seal's fat gives the leather a nice sheen, but also protects and waterproofs it. Very easy to apply, (smells, quite surprisingly, very nice), and looks good, too. Keep in mind that it darkens the color of the leather a tone. Not a big deal, looked better post-fat in my opinion.
Here are a couple more shots of the pouches pre-awl/stitching/trimming:
In the last photo you guys can see how I did the buckles. I basically cut out a small tab and punched a hole right below it, where I inserted the piece of leather looped over the buckle. Then, on the flap, I did the same thing, but this time the little piece of leather was riveted upside-down so that it could be folded over and buckled, hiding the upper rivet.


To loop over the belt I riveted a piece of leather to the back piece and folded it over, then riveted a snap at the bottom. Technically it would make more sense, or be more period-accurate, anyway, to put a belt-loop or some eyelets and tie it or something, but for ease snaps work just as well, if not better:
