I have been trying to find this rucksack/backpack since Dark season 1 in 2017. Now with season 2 I have a small lead: a zipper with a logo. The logo looks like it has two mountains. I thought it might be REI but it's not quite that. Has anyone seen any zipper like this? Do you know what company this could be?

Might be a German Army Mountain Bergen.
I found it last night, after two years of searching. It's an ESSL RU5026 40 Litre. It comes in dark olive and black, pretty sure the show uses black.
