From reading that it seems a lot more dense than EVA foam, or is this another name for it?

Think that the EVA and mini cell are the same. Just under a different name. I have been using this for a number of projects and it works the same as the thick EVA floor mats.
I prefer the option of different thickness and that I can purchase in various sizes.

My wife and I found a roll of crafting foam at Micheal's for 8 bucks... but I think it's 3mm or 1/8 inch. Should that be as durable as cardstock? Everybody seems to be using 5mm or greater, but I wanted to go thinner. It seems more screen accurate to have a thinner surface. I am testing it on the War Machine helmet. And I will be coating it with pba glue and then plasti-coating it to harden it once it's built. So far, I am liking the ease of foam, but I want the finish to be realistic. Any opinions on the thinner foam?

Everything I have seen so far shows the Mk 42 gloves and almost all the others are the same as the originals. The paint job is the only change. Zabanna's hands, as well as the simpler hand files should work.

Also, I found that I was using foam pep files and I'm not planning on using foam, just cardstock, fiberglass, and resin. Is this going to be a problem? (read: do I need to rebuild what I have so far?)

I would agree. I used 3mm on the fingers and gloves, and parts of the helmet/neck. 5mm/7mm for the rest of the suit. As long as you seal it well and you don't deform it while sealing, you'll be fine.

This is going to be my first armor. I want to know how can i scale it to my body and what program should i use to scale it. Also, i dont see the chest, back, hand, helmet and right arm and leg files.

I wouldn't mind doing it as soon as I figure it out. The biggest problem is scaling. Do you want the pdf's standard scale and then you scale the PDF yourself?
I am completely new to this, so, I am not really sure about scaling. Do you scale these files to fit the subject to be outfitted? If So, I have got a lot to learn. would it be cheaper for me to buy a IBM compatible computer in order to get my son outfitted in the latest Iron Man Armor?

The best way to scale it is to measure each body part and scale the parts accordingly. There isn't a small, medium, large type of overall scaling. Since these are based on comic heroes, body proportions aren't the same as normal human proportions.

There isn't a "height thing" to scaling. the lengths and sizes of body parts aren't directly related to height. Long arms, short arms, fat arms, long legs all make a difference. That's why a suit really needs to be scaled by the person building it to fit the person wearing it. This isn't as easy as the clothing rack at Wal-Mart.
