It hadn't really occurred to me, but one could make that argument. Unfortunately, Singer frakked that up and showed her pre-existing hair bleaching out white which is not how that works in the real world.

I suspect Watney was also dealing with malnutrition, which could lead to his hair turning gray. (I don't know if the vitamins he had would have covered everything he needed.)

Don't forget also the stress of trying to survive while stranded and all alone on Mars. That alone would probably turn just about anybody's hair grey.

That was what I thought too. It never entered my mind about the radiation. I'm guessing it was a combination of everything he went through and thought it was a nice touch.
