This gives an idea of the poster in question (he tears one down and numerous identical posters remain on the wall behind him)

The word WANTED is inverted text, and it's hard to discern what little widgets are on either side of the word, or indeed what the words below "DEAD OR ALIVE" are, at all... although I suspect the next line is "FOR THE CRIME OF ?????"

Actually, the one he rips down is like the one top center, without the inverted text:

I found some HD footage of the season 1-2 opening, and the more I play with the screenshots, the more I'm convinced that they spray-painted over the name on the one he tears down and the ones behind it, either for visual contrast reasons or maybe so they wouldn't feel so bad about recycling it week after week. The one by his head clearly has the first name "JACK" but very little else is distinguishable to me.

I can also sorta make out the gist of the one he tears down after he gets it down:

then there's four lines of smaller text at the bottom with is utterly illegible to me.
