Im looking for a hat pattern for the hat that Johnny Depp wore in Dead Man
Its a John Bull Topper hat.

I think if i trim the pattern down i can get the look i want

You may get the basic shape you want from that pattern, but it will not look like Depp's hat. Anything patterned will have distinct seams in it. That hat you have pictured is blocked in a single piece of felt. If you want something very close to Depp's hat, but not as expensive as a custom made John Bull Topper ($135), try this for $58:
