Disney Park's FX Lightsabers with removable blades.

So, I know very little about this stuff but isn't Rey's saber just Lukes old sabre?
Yes. Luke was given the lightsaber by Obi-Wan in A New Hope, then after losing it (along with his right hand) in Empire Strikes Back, the lightsaber somehow ends up with Maz Kanata, who passes it onto Rey.

What the good doctor said, except there have been some small modifications done to the saber's appearance\construction since ESB. Whether they actually come up with an in-universe explanation, who knows. There are differences, though.

That's true. There were even larger modifications made between ANH and ESB. Win7ermute, I'd highly recommend you take a look through The Ultimate Guide to Lightsabers eBook, it has some great research about the various props used in the original trilogy and makes for a very interesting read.

I hope they have made enough Luke's... er I mean Ray's.... so they aren't hard to get in a couple of months.

I want to mod one into a removable blade ESB saber.

Unlike Rey’s the Kylo saber doesn’t come with plugs. It does include the same stand and wall mounts along with a belt clip.
