Well the 2 first you named i was about to name aswell lol
I always look for a loose interpretation and "knight" just screamed "jedi knight" to me. I was actually trying to fit Liam Neeson into the answer but Mark Hamill came to mind. I'm sure there are some other great possible answers out there. I might have a couple more in my pocket, but I'll give others a shot.

The first might work, but I'm not sure about the last one.
In rounders, Norton was a card player. In Fight Club he had a mental disorder? And in the score he was a thief.
The actor I'm thinking of was a swindling con man, parting marks from their money.
