Vader knew who he was looking for, maybe he hired a guy he knew was motivated.
What do you think he did, put an ad in the Pennysaver?
He did warn "no disentigrations". Clearly he had history with some of them.
The bio-implants that replaced damaged flesh stripped all emotion from Dengar, save for hatred and a burning need for revenge.
qft...
edit: Is it just me... Or does he look a tad bit like Johnny Cash?

If you check the expanded universe guides, you'll find that just about everyone present in the Cantina in Star Wars is related to one or more of the main characters, as are many if not most of the background characters, like the guy in Empire running around in panic with an ice-cream maker after Lando tells them the Empire is taking over Bespin ... There is no such thing as a random bystander in Star Wars, everybody knows everybody.

slightly off topic, but wasnt dengar the bounty hunter han ran into on ord mantell (han refers to this run in at the beginning of empire, which is why he had decided to split from the rebels)? does anyone know where i can find that story? was it ever told in a book or comic?
That one showed up in the comics, yes. The old Goodwin/Williamson comics, actually. They were reprinted in the early 90s by Dark Horse and are, I think, in one of the various Dark Horse omnibus collections now.
