I'm in a similar position -- no kids of my own. Though my friends do have kids (for whom I'm Uncle Dan), who will be introduced to the OOT, come hell or high water.
I've spoken with my friends and specifically said "When you finally do show them the films, please, PLEASE let me be there to do it."
I think a lot of the prequel-focus was less about the prequel films themselves and more about the multimedia blitz that happened alongside them, such as the Clone Wars cartoons, action figures, etc. But that stuff faded somewhat over time (although the Clone Wars still continues in cartoon form, I guess). There's another aspect to this, though, and that's the fact that kids are absolutely bombarded with stuff these days, so I think the impact of the PT on them is FAR less than the impact of the OT on those who were kids when it came out.
The OT faced far less competition in terms of movie "space" in kids' lives. There just weren't as many other similar products out there at the time. By contrast, you've got tons of movie franchises now, all vying for that same "space" in kids' lives, to the point where I suspect that eventually the kids who grew up with the PT will look at them as "just another movie franchise" rather than holding them in the regard that OT fans who grew up with it still do today.
