For those building their props, which reference do you use? Frames from the episode? Screen captures like from Trekcore? Or from actual screen used props on display?

A blend of all of the above. In the end, it's what looks right to you. Or if you see a prop replica build you like, you can just ask what colours the builder used & follow suit.

The problem is that a prop's color can look different in every picture, because of different lighting and different cameras, and settings. Some props the original color code is known, but they've all been out of production for a while. Go with what captures your interpretation of the way the color looks to you.
