Those Y-Wing Helmets are Gorgeous!, it's a shame they never became available, I would've jumped to it!

If I had to hazard a guess The producers probably wanted to just stick to X-Wing helmets since Rouge One takes place Just before A New Hope in which they only had X-Wing helmets and wanted to match up better to that.
