The whole "let's steal the Death Star plans" mission seemed to be one improvisation after another. Leia (RIP Carrie, we love you) was only intended to retrieve Obi-wan to Alderaan originally. I think her ship ended up being the plan's escape of opportunity. Then, when she knew she was lost over Tatooine, she called another audible and employed R2 to get Obi-wan to complete the mission. Kenobi has to turn that mission over to Luke, who finally has to convince Han to rescue Leia and get the plans back to the rebels (not on Alderaan anymore, obviously). So, the plans, if you can call it that, changed many times before it finally saw its conclusion.
Regarding the rest of the rebel fleet, I'm certain they knew the coming battle would see the end of either the Death Star or the base at Yavin 4, with the latter being the more likely. The rest of the fleet and personnel not required to carry out the attack on the DS scattered, to fight another day in the event of their defeat at Yavin - only a handful of snub nosed fighters and the crews required to support them remained.
Interestingly, the mass assembled for the award ceremony following the victory at the battle of Yavin is much larger than anything witnessed prior, which I think can be explained by the reconstituting of the fleet that scattered after the battle of Scarrif. So, I like to imagine the whole rebel fleet orbiting above Yavin 4 at the end of Star Wars, off camera.
