Questions about building Sunset Overdrive weapons

I'm quite new to prop building, but I have my heart set on doing a Sunset Overdrive cosplay this year and I have a couple questions about building the guns. I have a handful of guns to choose from and I was wondering which would be best for someone with very little experience and what kind of materials I should be using. At first, I was thinking EVA foam, and now I'm not so sure. Here's the guns:

(Roman Candle)I honestly think most of this could just be made from, well, junk.

I'm leaning the most towards the Roman Candle, because I think it's the most recognizable from the game, but it looks really involved. Any thoughts?
