Question about latex and acrylic paint

I understand that painting separate pieces of a costume (IE: hands, feet, and skin) all at once would make it easier for me to match the colours. However, I'm impatient and I'm working on the costume parts one-at-a-time. Could I store my latex/acrylic paint mixtures in air-tight gladware containers without a problem, or would they separate/dehydrate/do something else horrible?
 
The paint will still separate regardless, my advise would be to make sure you have enough made that you plan to store that you already painted with. Thats what I do. it will still be good you just have to shake it back up once you have or are ready to reuse.

However the best thing is just right down the mix ratio's and redo it, if you are not willing to do all at once.
