Looking for an original trilogy Millennium Falcon model kit that's fairly accurate yet not too difficult for someone like myself who has basically zero experience with model kit. Any help would be appreciated

All the vintage MPC kits have too tall of sidewalls distorting the proportions, requiring resin aftermarket parts for correcting (Blue Moon, Falcon Kits, etc). Fine Molds, Bandai, and DeAgostini kits are better in this regard (but are also more expensive).

Bandai. 100%.

The Rise of Skywalker 1:144 Falcon is close to the original Falcon look to the casual observer, and is affordable.

This post is better suited to the general modelling section, though, since it's not a replica prop you're after by the sounds of it.
