Well my initial reaction was that Luke and Anakin would strike out on their own (perhaps similar to the bittersweet/melancholy ending originally talked about for ROTJ) and maybe bring back the Jedi on their own, as father and son. Obi-wan and Yoda would be gobsmacked. Luke had found a seemingly impossible third alternative. I think only Leia knows Vader was their father so even if Luke had shown up again with a "Light-side Makeover Anakin", most people might not necessarily realize he was Vader. They would think Vader died on the DSII and Luke had found his long lost father Anakin...which is true, from a certain point of view.I'd say any further explanations would possibly require some considerable bending of the truth though.
General Public: "Where has the legendary Anakin Skywalker been all this time? We thought he had died years ago! And what happened to his face?!"
Luke: "Uh...well...ummm...He almost died navigating on a spice freighter?"
However, I think there's a good point to be made that if Anakin had truly returned to the Light and wanted to be redeemed, he'd want to answer for his many crimes. He'd turn himself in. Somewhat anticlimactic but honorable all the same...
Just jumping in here, but I had the same thought roughly. Though I think Luke would have made up a variation of the old story given to him that Vader Killed Anakin. This time Luke would tell people that Anakin killed Vader. No one would question it. There'd be too much going on.
Whatever would happen after that would clearly entail his real story being brought to light and how they dealt with it.
But wouldn't that have been a nice thing for Luke to be able to say? And probably still could despite Vader/Anakin's death at the end of ROTJ.
Anakin embraced the Force and destroyed Darth Vader and The Emperor! Luke is happy he reached his father. The non-whiney version.
