Jayne Cobb hat

OK, I'm making a Jayne hat from a pattern I found online and I'm not very good at knitting. I'm doing it with circular needles and they keep binding up. Is there a way to knit it was a flat piece and then stitch it together at the end without it looking to horrible?
 
Have you ever knit anything before? It sounds like you're pulling your stitches too tight, if things "keep binding up". I've only knitted a Doctor Who scarf -- but I knitted a short, one-color scarf for practice first. That's what I'd suggest to you: find some other yarn and knit a practice hat or two, then try the Jayne hat. Good luck!
