Much like this PDF https://wannawanga.com/wp-content/uploads/2020/03/SWLB_March_2020.pdf covers the lightsabers of the series, does anyone know of a similar source but regarding blasters?
Is there a definitive source for the DL 44, or just blasters in general?

Not that I know of. There are MAJOR threads for the Han Solo blasters that are a treasure trove of information. As a big fan of prop construction, I've done lots of exploring on the RPF and learned lots of stuff that way. There are admittedly a lot of blasters, but they are much less complicated than some of the lightsaber props that were made. \
Truth be told, some of the changes are explained by production itself. The MGC Stormtrooper sterlings were the easiest to get ahold of for ROTJ in the US. The design of the ROTJ Han Solo blasters came from using a cast of the ANH Han Solo blaster (with the large cross-bar mount) and finding a way to attach a tiny M19 telescope to those two mounting points. The design was kept for the next movie!
