I know this has been done in Star Wars Blueprints but I would like to know if anyone has done a more detailed version we could frame.

Not of the whole Death Star.
There are detailed renderings of sections of both Death Stars in the Star Wars Cross Sections and Locations books from DK.
Poster-wise, the only thing out there is the Star Wars Blueprints (illustrated by myself and the RPF's Mr. Sparkle).
