Asuka Langley Jacket - Identifying the right fabric

Hi everyone,

I am relatively new to the whole sewing experience and I was hoping someone on here might be able to help me identify the best possible fabric for my next mini project. I will be able create the pattern and do all of the stitching myself. I am actually hoping to make something I can wear quite often (read: comfort) instead of something that I would only wear at a con.

I know that this picture is an HD-Render, but it actually has quite a lot of detail. Some of the options that I have come across are:

If one of you were to make this jacket, what would you make it out of? Also, I might use an embroidery machine to put on some special text such as EVA-02, so please note if this would be really tough to do with any material you might suggest! Also, has anyone worked with any materials that are waterproof and similar to a Columbia Softshell Weatherproof jacket?
 
Perhaps I should buy some white fabric for the whole outfit and then dye the material to match the source as closely as possible. Does anyone know what the material the necking/wrists are made out of? I want to say it is ribbing but I could be wrong on that.
 
I have no idea what kinds there are or what it would be called since I've never worked with or considered working with that sort of thing, but it looks like typical sweatshirt/sportswear kind of material. The stuff around the wrists and collar is a stretchy material commonly found on the cuffs and collars of jackets like that.
 
I can definitely do the sweatshirt fleece, although to get the right color I think I would have to dye it. I am having a ton of trouble finding a reasonably priced sportsware fabric to go with. Everything that I have seen is somewhere between $30-$50/yard. On top of that, I am worried that if I go with something sportsware it will be coated with something that would prevent dye from coloring it - such as DWR or another coating.

I believe that the stretchy material around the wrists is typically ribbing if the base fabric is non-stretch, or just more of the same fabric if it is stretchy.
 
Update:

I just went ahead and ordered some sweatshirt fleece from fabric.com to keep the project as simple as possible since I am still getting used to the process of sewing from scratch. Also, this is going to be my first time trying to embroider so that will be fun too, as I am going to add "EVA-02" just above the bust line dart (seam).
 
I was thinking about doing something like this to go with Mari's suit when I get around to making it, so I'll be keeping an eye on this.
