I like the folding wings one also

For me a good variant needs to have a reason for or an advantage that the new configuration brings instead of a random rearranging of parts like a lot of Trek ships seem to indulge in...

The top one, except remove the central vertical stabilizer, duplicate it and mount two vertical stabilizers on the sides of the top engine, able to come together pointed vertically for launch, and then spread out at 45* angles after it clears the launch tube for dual fin stabilizers.
Then mount a series of missiles below the wings, perhaps a section of a rocket pod from a Raptor. Outward mounted engines on lower wings make for increased maneuverability, using vectored thrust in addition to RCS motors.
