Rogue One, episodes 4&5, episodes 2&3 as a flashback. and then episodes 6&7. Episode one is optional but not recommended.

Forgot about that, yeah if there is any way to watch them as originally released as possible then that's the way to go.

Heres a fan edit of the 3 prequels edited down to 2 hours cutting the fat. I myself haven't watched it, and there are other fan edits as well, just some are longer. Might be a better choice to show someone that hasn't seen them that might not want to sit through all 3 of the prequels.
